C’est Ghislain Payer qui s’occupe essentiellement de la vinification et de la cuverie.
Le pressurage, inspiré du savoir-faire des anciens et appliqué aux techniques d’aujourd’hui,est réalisé sur le domaine avec un pressoir pneumatique 4000 kg. Toute la récolte est pressurée sur place et placée en cuves ou elle effectuera sa première fermentation.
Chaque cépage (Meunier, Chardonnay et Pinot Noir) est placé dans des cuves différentes.
C’est au moment de l’assemblage que le vigneron devient œnologue: il choisit les cépages et les proportions pour obtenir le meilleur vin possible et ce goût si typique de chaque maison.
Le Champagne Payer Ghislain et fille se caractérise par une majorité de Chardonnay et Meunier, apportant fruité et finesse.
En Avril le vin quitte les cuves pour être mis en bouteille ou il effectuera une 2ème fermentation : ‘’la prise de mousse’’.
Les bouteilles vont reposer en cave 3 à 10 ans (le minimum pour l’AOC Champagne étant de 15 mois).
Avant la commercialisation chaque bouteille repasse dans les mains du vigneron pour y être dégorgée et revêtue d’un bouchon en liège. “Nous utilisons la plus haute qualité de bouchon en liège, pour ne pas retrouver de gout de bouchon dans nos vins”

This traditional and authentic Cuvée is produced entirely at our Domain, from the vine to the wine, with grapes from Fleury-la-Rivière.
It releases notes of orange zest and lemon. In the mouth it immediately comes across as firm, followed by aromas of fig compote, hazelnut and almond. In the aftertaste there is the minerality of Chardonnay from Fleury-la-Rivière.
Goes perfectly with a blanket of sunfish and grey shrimps or poultry with ‘forestière’ sauce. The Brut Tradition can also be served as an aperitif.
Awarded by the Guide Hachette 2019, classified as “remarkable wine”.

The basis of this Champagne is the same as the one of Brut Tradition, but there is a higher dosage of the ‘liqueur’.
It is a caress in the mouth with perfume of red fruit and fig compote.
It is the ideal accompaniment to fruit and dark chocolate desserts. You can also surprise your guests by serving this demi-sec with a cheese such as Fourme d’Ambert.

For lovers of pure sensations, we have created this special Cuvée.
It starts with the right selection of grape juice from the first pressing. In the cellar, this wine awaits a long aging ‘sur lie’, at least 4 years. No sugar is added at the time of
“dégorgement”. No dosage means that the intrinsic qualities of the wine and its terroir come into their own.
The freshness and authenticity of a wine close to nature, the result of our ‘culture raisonnée’.
Enjoy it as an aperitif or with anything iodized, oysters, sushi…

A delicate rosé with a charming perfume with notes of strawberries and raspberry coulis.
The subtlety in the mouth can be situated between white and red fruit.
It is a soft wine because of its colour but powerful and expressive because of its aromas.
We recommend it with a tiramisu with raspberries.
An extra : our house red wine
We make our red wine with grapes from our oldest vineyard; the grapes are selected and, after 8 days of maceration, they give a fruity and gourmet red wine. It is then aged in oak barrels so that it can fully reveal its character.

This is an assembly of different harvests, a balanced and constant wine from year to year.
The freshness of white fruit is accompanied by a delicate yet intense toasty flavour.
On the palate, the dominance of Chardonnay gives a finesse with aromas of pear.
And as an extra, this ‘Cuvée Reserve’ can be consumed immediately or kept in the cellar a few years ; it will only become better.

This Cuvée Blanc de Blancs is made from the most famous white grape variety in the world: Chardonnay. This variety represents 45% of our production and is characterized by delicate aromas, floral and citrus notes.
Its freshness is expressed by its perfume of peach with menthol notes that bring sophistication.
In the mouth, flavours of lemon and grapefruit linger for a long time.
Combining food and wine? Perfect as an aperitif or with seafood and sushi.

Our favourite
2015 was the year of a rather late harvest. Grapes matured very gently, without being abruptly affected by a too harsh winter or a too warm spring.
Very good year for Chardonnay 50% of which is present in this Cuvée. Pinot noir 25% and Meunier 25%.
After bottling in April 2016, this nectar is still maturing in our cellars today.
Tasting: this champagne reveals aromas of warm brioche, followed by lemony and minty notes.
In the mouth, the profile is floral and airy.
It is a champagne full of charm and delicacy, for a festive meal or a special occasion.
Perfect with a dish with duck foie gras, champagne jelly, fig marmalade and gingerbread.

Long intended for local consumption: for passing tourists, grape pickers and the winegrower himself.
The Champagne ratafia is a nugget, hard to find because it is rare.
Perfume of candied fruit with spicy, toasted notes. In the mouth aromas of red fruit, morello cherries, lychees.
Ideal as a dessert, but also as an aperitif with a macaron with goat cheese and fig jam.
Bonus of the House : how is the ratafia made?
It is an assembly of grape must and ‘Fine de la Marne’.
“Les Chenaux” is the name of the plot used for our Ratafia ; the vines there are more than 50 years old ; the yield is lower but the grapes are more concentrated in aroma. The best bunches of grapes are selected to produce a high quality juice, called the must.
As for the « Fine de la Marne », it is obtained in the stills of the village where we distil the wine to obtain alcohol, artisan preparation, respecting ancestral traditions.
The Ratafia is further aged in oak barrels.
